Millbridge rd off of 152 is 5 miles and really flat

Stallings road is relatively flat, Lower Rocky River Road is also
relatively flat from the Pine Grove Church Road intersection up to
Hickory Ridge Road...maybe a slight grade.  Hickory Ridge is then pretty
flat from that intersection to just shy of Rocky River Road.  You could
recover a bit up to Rocky River road and take a right back to Lower
Rocky River.  I used that loop quite a bit training for IM Arizona.
It's tough to get more than 3 or 4 miles.  If you head out to Stanly
County, Renee Ford Road has a pretty long stretch that is flat or
slightly down hill.

How about the Huntersville Business park?  Do you think the elevation 
change would be too much?
